Summertime. Time for sweet meat-balls

These meat-balls are gluten-free - but defitely not low-carb. But hey - they are delicious. No need to be perfect! Right?

  • 400 g mixed minced meat
  • 1 bananas
  • 3 tablespoons almond flour
  • 1 squashed clove of garlic
  • 1 egg
  • 1 teaspoon mustard
  • salt
  • pepper

Mix all the ingredients of the meat balls. Form little balls and put them into a hot pan (with coconut oil).

  • 1 squashed clove of garlic
  • 1 tablespoon olive oil
  • 2 cups of water
  • 1 cup of rice

Put the garlic into the oil and add the rice.

Wait until the rice looks a little bit translucent.

Then add boiling water. Boil it up and put it into a wonderbag.

  • 1 mango
  • 1 banana
  • 200 ml coconut milk
  • 1 teaspoon Sambal Olek
  • 1 teaspoon sweet paprika
  • 1 small can of cubed tomatoes
  • 1/2 bunch of parsley
  • 1 onion
  • salt
  • pepper
  • coconut oil

Dice the onions and glaze them in the coconut oil. Add tomatoes and coconut milk.

Let the sauce reduce a little bit, while you cube the mango and slice the banana.

Add mango and banana into the sauce.

Add the spices, salt, pepper. Take away the heat and add the parsley.

Put all of this together onto the plates. You can use a teacup to form the rice. And some of the parsley to make it nice.
